Ingredients
- 2 servings of spaghetti noodles
- 3 tablespoons pine nuts
- 1 tablespoon avocado oil, butter or ghee
- 4 cloves garlic, peeled & finely sliced
- ½ teaspoon dried red chili flakes, (+ extra to serve)
- 2 small zucchinis, halved, the center removed & coarsely grated
- 2 lemons, zested & juiced
- 1 sprig of mint
Instructions
Step 1
Cook the spaghetti according to packet instructions. Drain, reserving a cupful of the cooking liquid.
Step 2
Heat avocado oil, butter or ghee in a frying pan over medium heat. Add garlic and chili and fry for 30 seconds until fragrant.
