15 Minute Zucchini Pasta

Dinner in 15 minutes? Yes please. I love it when I come up with healthy 15-minute meals like this one that literally blow my socks off. This easy pasta dish perfectly combines sweet, zingy and spicy flavors through a summery mix of chili, lemon and mint and it takes no time to make!

Ingredients

  • 2 servings of spaghetti noodles
  • 3 tablespoons pine nuts
  • 1 tablespoon avocado oil, butter or ghee
  • 4 cloves garlic, peeled & finely sliced
  • ½ teaspoon dried red chili flakes, (+ extra to serve)
  • 2 small zucchinis, halved, the center removed & coarsely grated
  • 2 lemons, zested & juiced
  • 1 sprig of mint

Instructions

Step 1

Cook the spaghetti according to packet instructions. Drain, reserving a cupful of the cooking liquid.

Step 2

Heat avocado oil, butter or ghee in a frying pan over medium heat. Add garlic and chili and fry for 30 seconds until fragrant.

Step 3

Add the grated zucchini and increase the heat to medium-high. Fry for 4.5 minutes until the zucchini softens.

Step 4

Add the lemon zest and juice, along with most of the mint. Toss to combine. Add a splash of the reserved pasta cooking water and simmer for a few minutes: stir through to coat the pasta.

Step 5

Serve with an extra sprinkling of mint leaves, chili flakes, toasted pine nuts and finish with a tablespoon of extra virgin olive oil on top of each serving.
