It is also a quick bread which means no yeast and easy to make, so when you are in a pinch to make something fast for guests or are just in the mood for something with a seductive taste, this should be your go-to recipe!

Ingredients
(You can always substitute the flours for what suits your body and taste best, but the following three are my favorites for this recipe.)
- ¾ cup cassava flour
- ¾ cup tiger nut flour
- ¾ cup buckwheat flour
- 1/4 cup olive oil
- 1/4 cup maple syrup or honey
- 1/4 cup lemon juice
- 2 eggs or flax eggs
- 6-8 drops lemon oil or 2 tbsp lemon zest
- 1 tsp vanilla extract
- 1/4 tsp baking soda
- 2 tbsp powdered monkfruit to sprinkle on top (optional)
Instructions
Step 1
In a large bowl, mix together all of the ingredients until combined.
Step 2
Pour batter into a parchment lined loaf pan and bake at 350° F for 30-40 min.
Step 3
Sprinkle the powdered monkfruit on top, if using. Let the loaf cool before cutting into slices. Enjoy!
