Lemon bread

If you are into getting summer vibes from a recipe, look no further. This lemon bread is so fluffy, moist, sweet, lemony and HEALTHY that you’ll be ready to put your bathing suit on and pop the lounge umbrella! It is also a quick bread which means no yeast and easy to make, so when you are in a pinch to make something fast for guests or are just in the mood for something with a seductive taste, this should be your go-to recipe!

Ingredients

(You can always substitute the flours for what suits your body and taste best, but the following three are my favorites for this recipe.)

 

  • ¾ cup cassava flour
  • ¾ cup tiger nut flour
  • ¾ cup buckwheat flour
  • 1/4 cup olive oil
  • 1/4 cup maple syrup or honey
  • 1/4 cup lemon juice
  • 2 eggs or flax eggs
  • 6-8 drops lemon oil or 2 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1/4 tsp baking soda
  • 2 tbsp powdered monkfruit to sprinkle on top (optional)

Instructions

Step 1

In a large bowl, mix together all of the ingredients until combined.

Step 2

Pour batter into a parchment lined loaf pan and bake at 350° F for 30-40 min.

Step 3

Sprinkle the powdered monkfruit on top, if using. Let the loaf cool before cutting into slices.  Enjoy!
