Orange, Cranberry, Cinnamon Muffins

Orange is cranberry’s ultimate soulmate. Like peanut butter is to jelly, Fridays are to wine, and pink is to purple, they are an obvious match made in heaven. Sprinkle a little cinnamon in the mix, and well, there you’ll find bliss.

To boot, they are super moist and bursting with flavor and nutrients. This recipe is a delicious way to start your mornings this holiday season or they also make a great mid-afternoon snack. Made with fresh cranberries, orange juice, and orange zest, these festive muffins not only look bright and colorful but they add a great amount of clean protein, vitamin C and omega 3 to your daily nutrition.

Ingredients

  • 2 large eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 4 Tbsp coconut oil or ghee, melted
  • ¾ cup honey or maple syrup
  • 1 cup orange juice
  • 2 tbsp orange zest
  • 1 tsp baking soda
  • 1 cup almond flour
  • 1 cup buckwheat flour
  • ½ cup fresh cranberries (I cut mine in half because they are quite tart)
  • ½ cup dried cranberries (apple juice sweetened preferred)
  • ½ cup pecans or walnuts, chopped

Instructions

Step 1

Preheat oven to 350°F/175°C. Grease muffin tins, or use paper muffin cups.

Step 2

Combine beaten eggs, melted coconut oil, vanilla extract, cinnamon, sweetener, orange juice, and zest in a mixing bowl. Sprinkle the baking soda on top of the liquid mixture until it foams.

Step 3

Add and stir in the flours until well-combined.

Step 4

Fold in the cranberries and nuts to the mixture.

Step 5

Fill each muffin cup to the top until firmly filled.

Step 6

Top each muffin with 2 or 3 cranberries for added color and also with nut pieces if desired.

Step 7

Bake for approximately 20-25 minutes or until an inserted toothpick comes out clean.

Step 8

Allow 15-20 minutes for muffins to cool before serving.

Step 9

Enjoy as is, or top with cranberry sauce or your favorite jam!
