Wildly Delectable Walnut Cookies

Walnut Cookie

You know when you are peckish for something but you don’t have anything in your cupboards that fulfills the ‘peck’ so you make your own creation and suddenly you have something even more wonderful than you had hoped for? Well that is how these cookies came about. It was a cold and dreary winter Saturday, a perfect day for a book paired with some cookies and tea. I had the book and the tea but no cookies. So I set off on a mission to create the perfect cookie with the ingredients I had in my kitchen. On the first batch I didn’t nail it, so I kept trying. By the 3rd batch I was in Heaven. We had a house full of healthy cookies and smiling faces., so I took notes so I could share the recipe with you here.

Ingredients

  • ½ cup soaked flaxseeds
  • ¾ cup walnuts + 10 walnut halves for the topping
  • ½ cup dark, no sugar added, chocolate chips (ex. Lily’s dark chocolate baking chips)
  • 1 cup tiger nut flour
  • ⅓ cup cassava flour
  • ⅓ cup collagen powder
  • 1 tablespoon cinnamon
  • ½ teaspoon vanilla powder
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ⅓ cup unsweetened nut or coconut milk
  • ½ cup maple syrup or honey

Step by Step Instructions

Step 1

Cover flax seeds with water or nut milk and let sit for at least 30 minutes, until gelatinous consistency.

Step 2

Mix flax seeds, walnuts, nut milk and maple syrup together in a bowl and blend with a standing or handheld blender.

Step 3

Slowly add in the remaining ingredients, stirring as you go.

Step 4

With a spoon, make cookie balls and put them on baking paper/baking sheet. With the
back of the spoon, flatten them out a little.

Step 5

Top with crushed walnuts, pressing them into the dough with your hand a little. I use one (crushed in your fingers) walnut halve per cookie. 

Step 6

Put in the oven. 

Step 7

Let cook for 18-20 minutes. They are a softer cookie, so if they aren’t baked to your liking, you can leave them in there for a few more minutes.

Step 8

When they are finished baking, I drizzle mine with raw honey.
